John Collins. John Collins cocktails are made from Vodka, the Tom Collins is typically made using Gin. Whichever spirit you choose, Collins cocktails are crowd- pleasing and super simple to make. Use fresh lemon juice, simple syrup and sparkling water. Its clean, crisp taste makes it the ideal sip for dinner parties.
Place 1/2 cup water and 1/2 cup sugar in a medium saucepan over medium heat. Cook until sugar is completely dissolved. Remove from heat and let cool to room temperature. Transfer simple syrup to a mason jar or other airtight container. Add 1/2 cup lemon juice and 1/2 cup lime juice. Cover and shake vigorously.
Directions. In a large glass measuring cup combine 1 cup of the blueberries, the lemon juice and honey. Using a muddler or the back of a spoon, gently bruise blueberries against side of cup. Stir in gin. Strain through a fine-mesh sieve into a large pitcher. Slowly pour in club soda; stir gently.
